Fine Food Futures ahead at Forelles at Fishmore
07 April 2011
Fishmore Hall bares the Fruits of its Labour with an exciting new restaurant opening

Ludlow’s hidden gem, Fishmore Hall shares a secret with the spring opening of its new Orangery Restaurant. After receiving an eclectic mix of suggestion names from by Fishmore Hall customers from a competition organised by the hotel, award winning hotelier Laura Penman has announced “Forelles at Fishmore” as the new title for Ludlow’s finest new restaurant.
The winning name was put forward by regular visiting customers, Gloucestershire couple Mr and Mrs Kingscote, who coincidently spied Laura planting pear trees in the grounds three weeks previously! Though it must be noted, these weren’t your average Comice pear trees, but delicious almost too-good-to-eat, Forelles pear trees. Forelles pears are seen as the kings of the pear community, they are sweet and luscious and a rarity being a perfectly healthy indulgence. A few fruity facts also include that the Forelle pear arrived in the UK in the 1800’s which is around the same time Fishmore Hall was built.
Forelles at Fishmore could not be a better suited name, to echo the hotel’s innovative and beautifully British food menu, 90% of which is sourced locally in Ludlow. The homely feel of Fishmore Hall is continued into the light and airy restaurant conservatory. It has wonderfully peaceful atmosphere created by the window views of picturesque Clee Hill and surrounding greenery that seems to go on and on forever. Forelles at Fishmore is a perfect place to sample a fine selection of Shropshire delicacies in the company of the impeccable hospitality service of Laura Penman and her team.
Finally, congratulations to Mr and Mrs Kingscote whose winning name has awarded them a complimentary dinner for four at Forelles at Fishmore.
For more information on dining at Forelles at Fishmore please visit www.fishmorehall.co.uk or contact Laura Penman on telephone 01584875148.

Fishmore Hall, a Romantic Revelation

| |
| |
With its hill-top views and secret hideaway location, Ludlow’s Fishmore Hall makes the perfect romantic setting for small and intimate weddings.
Located just a 5 minute drive from Ludlow train station, Shropshire’s special little gem has recently undergone a restaurant refurbishment. Newly named Forelles at Fishmore, now features a light and airy glass conservatory with folding French doors allowing easy access into the original restaurant. The new extension means Forelles at Fishmore can now accommodate up to 140 dinner guests.
Fishmore Hall is licensed for civil ceremonies up to 140 guests. The lawns now feature a newly hand built iron pagoda so outside weddings can now take place. Garden marquees can also be arranged for your wedding providing a wonderful setting for intimate weddings for 4 or more guests. Guests can take over the 15 boutique bedrooms in the hotel on an exclusive use basis or a non exclusive package.
The beautifully-restored Georgian hotel perfectly combines traditional and contemporary décor. Maintaining a minimal yet warm colour scheme theme throughout the house allows couples the freedom and flexibility of choosing any wedding theme they desire. Each of the 15 bedrooms have been individually designed with luxury and comfort in mind. Each room offers a bespoke pillow service and delicious Molton Brown products. The bathrooms at Fishmore Hall are like small spas, with huge walk in showers with waterfall shower heads and some feature double-ended baths. Other special touches include local foodie samples in the mini bar such as Bredon Hill Elderflower Pressé, Ludlow Vineyard's white wine and cider, Glennan's crisps and a variety of delicious nibbles from the Ludlow Fruit and Nut Company. Fishmore Hall can also provide in-room spa treatments for guests. Bespoke treatment packages especially designed for brides to be.

In her new role she will manage a team of 20 staff and continue to grow the business by innovating new treatments, including the launch of a new range of Verbena Spa treatments this Spring along with a wider selection of pregnancy treatments.
To coincide with the new appointment a new Spa menu has also been launched designed by Food and Beverage Director, Chris Staines. The refreshed Spa menu includes spa breakfast, patisserie and savoury lunch dishes, with new additions including the delicious Artichoke, red pepper & Serrano ham salad, Seared Yellowfin tuna with cucumber, radish & coriander salad, along with a selection of lighter spa “tapas”.
The Verbena Spa at the Feversham Arms Hotel was launched in October 2008 after a £1.2 million investment. The country chic décor of The Feversham Arms is reflected throughout the spa, offering a relaxing, natural and English spa experience unlike the clinical feel of many existing spas. With complimentary iced tea and book reading and relaxation areas, the Verbena Spa offers a cosy and relaxed atmosphere.
Spa facilities include a Saunarium, Aromatherapy room, Salt vapour room, Monsoon shower, Ice cave, outdoor hot-tub & heated pool as well as the South-facing terrace spa garden, designed by Matthew Wilson. Elemis, Anne Sémonin and Jessica Nails are Verbena Spa’s product partners. Alternative therapies such as Neuro Structural Integration, Reconnective Therapy and Reiki are all within the treatment menu. The spa was awarded 5 bubbles from the Good Spa Guide.

Stella McCartney Afternoon Tea At The Landmark Mandarin Oriental, Hong Kong
14 February 2011
Hong Kong, 31 January 2011 – MO Bar at The Landmark Mandarin Oriental, Hong Kong is renowned for its contemporary and fashionable afternoon teas, and the latest collaboration sees the creative chefs working with British designer Stella McCartney to offer Hong Kong’s first ever organic and vegetarian afternoon tea throughout the month of March.
| |
| |
Featuring savoury bites, mini pastries, light-as-feather scones and a sweet temptation cupcake buffet with a choice of JING tea or coffee, the HKD 200 (plus 10% service charge) tea set has become the definitive Hong Kong afternoon treat.
What makes MO Bar’s afternoon teas even more popular are the collaborations with some of the world’s most prestigious brands whereby the creative minds from the kitchens of MO Bar create delicious dishes inspired by fashion collections or fragrances of luxury brands such as Marc Jacobs, Chloe, Guerlain and Jo Malone.
As Stella McCartney is a lifelong vegetarian, MO Bar’s chefs stayed true to her beliefs by creating a delicious vegetarian menu using organic ingredients while at the same time taking inspiration from her British roots and her Spring/Summer 2011 collections.
“Eco-friendly fashion is on every fashionista’s wish list nowadays and British designer Stella McCartney is leading the pack with her vegan-friendly and feminine designs. We are delighted to be working with this brand,” said Sidney Schutte, Executive Sous Chef at The Landmark Mandarin Oriental.
In line with the strong belief that people can go green in every aspect of life, Stella McCartney’s collections eschew leather and fur whilst retaining her signature style of sharp tailoring, natural confidence and sexy femininity.
Taking their inspiration from some of Stella’s personal favourite vegetarian treats, and the botanical citrus print in her recent collection, the chefs have created a series of special Stella McCartney cupcakes, and guests are invited to choose their favourites from the sweet temptation buffet.
The Stella McCartney tea set will include mouth-watering bites such as Beetroot, Goat Cheese and Hazelnut Gratinated Toast, Quiche with Eggplant and Stilton, Whole Wheat and Corinthian Raisin Scones with Clotted Cream served with Home Made Organic Jams and Golden Bramley and Cinnamon Crumble, many of which are Stella McCartney’s personal favourites. The tea set will also include a Stella McCartney inspired cupcake buffet and a choice of JING tea or coffee. All guests will receive a special gift set from Stella McCartney with the tea set (while stocks last).
Afternoon tea is served from 3 p.m. to 5.30 p.m. from Mondays to Saturdays and 3.30 p.m. to 5.30 p.m. on Sundays. Reservations are recommended and guests can book on +852 2132 0077 or via e-mail at lmhkg-mobar@mohg.com.

Blumenthal, of the three Michelin starred The Fat Duck in Bray, Berkshire, The Hinds Head pub and The Crown pub of the same village, has won international acclaim for his unique and multi-sensory approach to cooking. This first restaurant to open outside of the village of Bray features the chef’s inimitable style of culinary alchemy with a menu heavily influenced by his ongoing research and discovery of historic British gastronomy.
Focusing on the revival and modernization of traditional British recipes, the menu at this highly anticipated new restaurant features simple contemporary dishes inspired by Britain’s historic gastronomic past and recipes dating as far back as the 16th century, such as Scallops with Cucumber Ketchup and Peas, Slow Cooked Short Rib of Beef in Red Wine Juice with Triple Cooked Chips and Tipsy Cake, made with Spit Roast Pineapple and Jersey Cream.
Mandarin Oriental and Heston Blumenthal worked with the internationally renowned designer, Adam D. Tihany, to create the restaurant interior. Inspired by Chef Blumenthal’s deep interest and knowledge of 15th and 16th century cookery, the design is a contemporary British Brasserie concept; an innovative illustration which influences the senses, yet remains true to British culinary and design traditions. Tihany highlights rich, natural materials such as wood, leather and iron – historical elements at the root of 16th century British style – incorporating them in contemporary ways to reinforce Heston’s revival and modernization of traditional British recipes.
With uninterrupted views over Hyde Park, the restaurant also features floor to ceiling glass walls providing a glimpse into the open kitchen and an unusual one-of-a-kind large scale pulley mechanism. This contemporary chrome and steel contraption has been modelled after the 16th century pulley system originally designed for the Royal British Court’s kitchens. A private dining room is available for up to 10 guests as well as a chef’s table for six located within the kitchen. During the summer months, a terrace overlooking Hyde Park will provide guests with one of London’s finest al fresco dining locations.
Seating 140 guests, Dinner by Heston Blumenthal is open for lunch and dinner and from May 2011, afternoon tea. The kitchen is headed by Ashley Palmer-Watts, group executive chef of the Fat Duck, who has worked with Blumenthal for ten years.
The etymology of the word ‘dinner’ gave rise to the name of the restaurant. In Britain, ‘dinner’ still means the main formal meal of the day, and it is usually served either in the middle of the day, or in the evening, depending on where you are in the British Isles. Originating from the 13th century French word disner (pronounced dee-nay), dinner was in fact originally eaten at breakfast time. The rise of social and economic changes, including technical innovations such as gaslight and electricity, allowed for the timing of this main meal of the day to be eaten later in the day.
Dinner by Heston Blumenthal is open from 12 noon to 2.30pm and from 6.30pm to 10.30pm.
Three course set lunch from GBP 28
Three course a la carte dinner from GBP 55

Michelin Starred Chef Chris Staines takes the Feversham Arms Hotel on a food journey
18 January 2011
Michelin Starred Chef Chris Staines has joined the Feversham Arms Hotel as Food and Beverage Director which marks the start of an exciting new food journey for the hotel in 2011. Chris is overseeing all food and beverage at the hotel including restaurant, lounge menus, in-room dining, service and Spa-tisserie at the Verbena Spa and will work alongside Head Chef Simon Kelly to drive the gastronomic experience which Kelly has shaped since joining the hotel in 2006.

| |
| |
Chris has returned to his native Yorkshire to take up the appointment. He commented “I love Yorkshire and coming back to where I was born to further develop the Fev as a foodie destination has to be one of the most exciting things so far in my career. Our team here is very passionate about local produce, which features heavily in the new dishes and menu concepts which Simon and I are currently working on.”
Chris’s appointment coincides with his latest quest to select his favourite food heroes of Yorkshire. He will work closely with these suppliers to showcase their fantastic produce, perhaps even helping create a couple of “Feversham only blends and creations” whilst developing the new innovative menus for the restaurant. The menu at the Feversham showcases the best that North Yorkshire has to offer including Yorkshire cheeses, game and an abundance of seafood from the North Sea
On the edge of the North Yorkshire Moors, the Feversham Arms is ideally situated to make the most of what the surrounding land and sea has to offer and making it easy to source quality ingredients from good local suppliers. Fans of the Feversham Arms and food lovers alike will be able to follow developments via an exciting new “Chef’s Diary”, a foodie blog by Chris and Simon who will share the latest “food heroes” news along with tips on seasonal food and recipes, plus going behind the scenes in the Feversham kitchen.
Chris had chosen Hodgson of Hartlepool who are regarded as one of the best fishmongers on the East Coast and Yorkshire Game who supply fresh, varied local (plucked, oven ready) game to quality restaurants in North Yorkshire as his first two “food heroes”.

Glorious 12th marks Northern debut of Bridget Lansley’s “Shooting Collection” at Liquid Amber
12 August 2010
August 12th, also known to the shooting connoisseur as the glorious 12th marks the start of the shooting season for Red Grouse, an increasingly popular sport across the UK, particularly in North Yorkshire. The moorland of the area is ideal for wild grouse to breed and there are dozens of good shoots within easy reach of the famous market town of Helmsley.

| |
| |
For those looking for luxury hotel accommodation in the area, the Feversham Arms at Helmsley is the perfect choice for both male and female guests who wish to participate in shooting parties or relax in the hotel’s wonderful Verbena Spa. Shooting is traditionally very much a male past time, but is increasingly enjoyed by women and there are more mixed gender shoots and guns are often accompanied by wives and partners.
Of interest to hotel guests and to coincide with the start of the shooting season, the hotel’s Liquid Amber art gallery will be showcasing paintings from acclaimed artist Bridget Lansley’s “Shooting Collection”.
A beautiful selection of paintings depicting scenes from a grouse shoot, this will be Bridget’s first showcase in the North of England.
Her love of colour, brush strokes and texture give her paintings a strong yet soft focus. She paints at her home in Ham, Surrey and has enjoyed success in Europe with exhibitions at many prestigious galleries in London and the Home Counties.
Jill Rhatigan, owner of the Feversham commented, “We are over the moon that Bridget has chosen to exhibit her latest collection at Liquid Amber especially as she has never exhibited in the North of England. We are particularly excited as North Yorkshire is renowned for it’s grouse shooting and Bridget’s paintings will be very popular with both art lovers and shoot enthusiasts alike”.
Prices range from £750 to £2900 and there are 2 pastels and 3 oils for sale in the collection.

The Regency town house is currently undergoing a £5 million renovation programme and will re-open at the beginning of October as the new headquarters of the Academy of Medical Sciences, providing a home for their prestigious Fellowship and a focal point for the medical and health research community.
