  Chef who said ‘I do’ at Fishmore Hall, says ‘I do’ again as he accepts the role of the hotel’s new Sous Chef

Damien McNamara joins the award winning hotel and restaurant in Ludlow, Shropshire, working for the ever inventive David Jaram in the 3AA rosetted Forelles at Fishmore.

 
   
  McNamara, who prior to this worked at The Mustard Seed in Ballingarry, Ireland, married his wife Phillipa at the foodie hotspot in January 2010.

Having relocated from Limerick to Ludlow, Damien is thrilled to have been given the opportunity to further develop his skills and inspire his influence at the hotel which he inevitably rates, having elected the property to celebrate a milestone occasion.

He said: “Fishmore Hall is obviously a special place for my family and I can’t wait to make my own contribution and play a part in making it momentous for others.”

His new role will involve assisting David to create new ideas and menus as well as managing the kitchen team, who already have an impressive reputation.

The restaurant gained 2AA rosettes within just ten days of opening, picking up their third in 2011.

Laura Penman, owner of the 15 bedroom boutique haven, said: “It’s been great to have Damien on board. I still remember his wedding here a couple of years ago and he’s so passionate about food; his input will be invaluable.”

  New restaurant, New menu – but the same service, style and class

The Michelin Starred ‘Le Candille’ Restaurant at the 5*Le Mas Candille in Mougins, South of France has been re-opened after undergoing significant renovation.

 
   
  Le Mas Candille is a tranquil haven in the Cotes d’Azur, set in 10 acres of peaceful gardens, with Europe’s first Shiseido Spa.

The resort is a member of Relais & Chateaux and one of the defining features of the hotel has always been the Michelin Star restaurant ‘Le Candille’ and the unique culinary masterpieces of Chef Serge Gouloumes.

After a month of renovation, Hotel owner, Mark Silver is delighted with the new look and has already received positive feedback from regular guests. Mr Silver said: “We are always keen to develop the hotel and make improvements where necessary. The new restaurant’s decor is inspired by the 18th century history of Le Mas Candille and evokes timeless elegance.”

Silver hired renowned architect Michael Zander who specialises in luxury hotels and villas. Zander was previously appointed at Le Mas Candille for the 2009 launch of six new suites which brought an electric blend of traditional and contemporary.

Mark explained that the crowning glory in the new dining restaurant is the ceiling full of nuances of the sky, taken from the painting Le Troupeau by the celebrated local artist Jean Honore Fragonard.

He said: “The renovation has been a huge success and we’ve had many guests comment already, on the light we now have in the restaurant. It’s made such a difference; and with a number of significant events coming up in the next few months, particularly the Monaco Grand Prix or Cannes Film Festival; we can’t wait to welcome both new and old guests.”
To mark the occasion, Chef Serge Gouloumes has also introduced a new spring menu and included a signature dish of wild Seabass and Yazu foam or farm raised poultry dodine with Foie Gras and Truffles.

  Chicheley Hall opens its secret gardens for the first time

Chicheley Hall: Home of the Kavli Royal Society International Centre is to open its doors to the general public for the first time in its 300-year history this Spring by offering afternoon tea and picnics in the house and its 85 acres of landscaped gardens.

 
   
  The Grade I listed country house built in 1719, which was previously only open to the events industry, is one of the finest examples of Georgian architecture anywhere in the country and boasts grounds designed by famed gardeners George London and Henry Wise.

Many of the ingredients included in Chicheley Hall’s afternoon teas are sourced from the property’s Victorian walled gardens.
Chicheley Hall’s traditional afternoon tea’s include a variety of organic teas and coffees as well as finger sandwiches, homemade cakes and homemade jams.

Now owned by the Royal Society, Chicheley Hall underwent a £12m refurbishment in 2010 in order to restore its original and timeless features.

Before being bought by the Royal Society in 2007, the home, which is ten minutes from Milton Keynes, had been owned by the 2nd Earl Beatty, a British politician.

The gardens at Chicheley Hall, which were designed by George London and Henry Wise, also include a lake and walled gardens.

All profits made from events held at Chicheley Hall are recycled back into the Royal Society’s work.

Chicheley Hall has also been used as a location for a number of television series and films including the Colin Firth version of Pride and Prejudice and Enigma, starring Kate Winslet.

  Isle of Eriska in the Scottish Highlands receive Gold Award in Green Tourism Business Scheme

The Isle of Eriska Hotel, Spa and Resort in the Scottish Highlands has been given a Gold award by the Green Tourism Business Scheme.

 
   
  The hotel, which is set on its own 300 acre private island, achieved an 86% accreditation rating after a qualified assessor visited the hotel in April.

The 5 star hotel was praised for its strong management ideals which ensured all staff and guests were aware of their green commitment.

Other areas highlighted for their green values include Solar PV installation, the use of a wood pellet boiler, food waste composting and a dedication to conservation and provision of wildlife habitat on the island.

The assessor also noted the hotels dedication to local food and its free planting policy for towel reuse.

The hotels owner Beppo Buchanan-Smith said: “We are delighted to have received a Gold award from the Business Green Tourism Scheme; it shows that we are hitting the green goals we set out to achieve.”

“I’m delighted with the 86% accreditation rating but that doesn’t mean we can stop there. We will strive year on year to improve upon that rating as sustainable tourism is something we feel very strongly about here at the hotel.” He added.

  New General Manager at the Isle of Eriska

The Isle of Eriska Hotel, Spa and Island in the Scottish Highlands has appointed Anne Schaeflein as the new General Manager.

 
   
  Anne joins the Isle of Eriska having left The Montpellier Chapter Hotel in Cheltenham at the end of 2011.

Schaeflein’s career in hospitality began in 1998 when she undertook an apprenticeship at Gasthaus zur Post in her native Germany before becoming Demichef de rang at Trader Vic's restaurant in Hamburg.

Ms Schaeflein brings with her a wealth of experience having worked at a number of Scotland’s best hotels including The Gleneagles Hotel, where she was Food and Beverage and Front of House specialist and Kinnaird Estate and Dakota Glasgow, where she held the position of General Manager.

Owner of the Isle of Eriska, Beppo Buchanan-Smith said: “We’re delighted to have appointed Anne as our new General Manager and I’m looking forward to working with her.
